    Most Incredible Burger Ever!

    For those who have purchased the County Connect Beef Share, this one is for you.

    Mix contents of your ground beef in a bowl.

    Cut up one large red onion as thinly as you can.   Slice 6- 8 of your favourite buns in half.

    Mix in tablespoon of salt, and ten turns of the pepper-mill.

    Form out 6 – 8 burgers.

    Flatten them to your liking and season with salt, as you would a steak.

    Grease a Cast Iron skillet with butter, or any pan you like to use and bring to high heat.

    Sear your burger as you would a steak.  After a few minutes, when you flip your burger, put the onions on each.

    When you flip the second time drop the heat to simmer and place the buns on the top of your skillet.  The onions will steam the meat, and the buns will act as a lid absorbing all of that amazing aroma.

    When the burgers feel firm to the touch, or are medium rare when cut open, remove from the heat, assemble the burgers with onion on the top.  You need nothing else.  Enjoy.

    Strawberry Gorgonzola Canapes

    What a great fusion of flavours in this easy to make recipe.  I'm thinking sunshine, summer, and a glass of local Rose... What better way to enjoy the day?  Could there be anything more lovely than fresh, juicy local strawberries... just another reminder of how great it is to live here... Mmmmm... Enjoy!

    6 slices bakery white sandwich bread

    2 tbsp unsalted butter melted

    6 oz(175g) gorgonzola cheese softened

    3 tbsp 35%cream

    2 tbsp chopped fresh basil

    1 tsp chopped fresh thyme

    1/4 c toasted walnuts and pecans

    12 small starwberries

     

    1. preheat oven to 425 F

    2. trim crusts off bread and cut each slice into 4 squares. brush with butter and place on baking sheet

    3. bake for about 10min. or until golden. let cool completely

    4. using electric hand mixture beat gorgonzola, cream, basil and thyme together until very smooth. spread evenly on toasts. spinkle each with walnuts. top each with strawberry slices.
